FODMAPPED Butter Chicken (FODMAP Friendly)
Serves: 4 Prep Time: 5 mins Cook Time: 20 mins Total Time: 25 mins
Ingredients:
1 tbsp onion and garlic infused olive oil
1 large carrot, thinly sliced
2 large breast fillets, diced
400g Fodmapped butter chicken simmer sauce
1 cup raw basmati rice
Directions:
In a large saucepan over a medium heat to high heat, heat the olive oil, then add the carrots. Cook the carrots for 5 minutes or until softened.
Add the chicken and cook stirring until almost cooked through.
Add the Fodmapped butter chicken simmer sauce, stir. Turn the heat to low, cover and simmer for 15 minutes, ensuring the chicken is cooked through. Stir occasionally.
In the meantime, in a small pot of boiling salted water add the rice and cook as per packet instructions. Drain and set aside once cooked.
In a bowl, add the butter chicken on top of a bed of rice. Serve and enjoy!
Store this dish in an airtight container in the fridge for up to 3 days.
